One Pot Vegan Mushroom Stroganoff

Ingredients:
1 tablespoon olive oil
1 medium onion, finely chopped (optional)
3 cloves garlic, minced
4 cups sliced mushrooms (cremini or button)
2 ½ cups dry rotini or fusilli pasta
3 cups vegetable broth
1 cup unsweetened coconut cream
2 tablespoons nutritional yeast
1 tablespoon soy sauce or tamari (for gluten-free)
1 teaspoon Dijon mustard
Salt and black pepper, to taste
Chopped fresh parsley, for garnish
Instructions:
Heat the oil in a large pot over medium heat or add to the Dream Cooker on saute mode. Add the onion and garlic and cook for 2-3 minutes, until softened.
Add the mushrooms and sauté for 5-7 minutes, until tender and browned.
Stir in the dry pasta, vegetable broth, soy sauce, mustard, and nutritional yeast. Bring to a boil.
Lower the heat and simmer, uncovered, for 10-12 minutes. Stir occasionally to prevent sticking.
Using the Dream Cooker: Seal the lid and set to Pressure Cook – High for 4 minutes. Once done, let it naturally release for 5 minutes, then quick release the remaining pressure.
Once the pasta is cooked and most of the broth is absorbed, pour in the coconut cream and stir well. Let simmer another 3-5 minutes until creamy.
Using the Dream Cooker: Switch back to Sauté mode. Stir in the coconut cream and simmer for 2–3 minutes, until thick and creamy.
Season with salt and pepper to taste.
Serve immediately, garnished with chopped parsley.
